Seven Fish Cold Fish Salad

Ingredients

  • 1 calamari, cleaned
  • 6 shrimp, cleaned
  • 8 clams
  • 10 mussels
  • +1 clove garlic, minced
  • 1 red onion, chopped
  • 1 stalk of celery, chopped
  • 1 bunch of Italian parsley, chopped
  • 1 bunch of fresh basil, chopped
  • Juice of 1 lemon
  • ½ cup extra virgin olive oil
  • ¼ cup sweet vinegar
  • salt, pepper and oregano
  • 4 cups arugula

Preparation

Boil the calamari, shrimp, clams and mussels for 8-10 minutes. Remove the meat from the shellfish and then dice along with the shrimp and calamari. Mix together the vegetables in a large serving bowl. Add the olive oil, sweet vinegar, lemon juice and then the fish. Toss and season with salt, pepper and fresh oregano.
