Prosecco Cocktails

To celebrate the inclusion of the Prosecco Hills as a UNESCO World Heritage Site, create a sparkling wine event this weekend. As much as we love a glass of chilled Prosecco, there are outstanding cocktail recipes and ideas to try. You can even create a Prosecco fruit salad, with berries and the other fruits of your choice – just add Prosecco and a bit of mint for a delicious addition to a weekend brunch.

Prosecco Gold Rush

Serves 4

Ingredients:

  • 12 oz Prosecco, chilled
  • 2 oz vodka, chilled
  • 1 ½ oz cinnamon schnapps

Preparation

Pour Prosecco into a clear glass without ice. Add vodka and cinnamon schnapps and stir to mix. If you use Goldschlager Schnapps, there will be gold flakes that sparkle along with the sparkling Prosecco.

Aperol Spritz

Ingredients

  • 4 ½ oz Prosecco
  • 2 ½ oz Aperol
  • 1 slice of lime
  • 1 oz club soda

Preparation

Pour the Prosecco into a tumbler glass filled with ice. Add the Aperol, slice of lime wheel and top with club soda.

Naples Negroni

Ingredients

  • 1 oz Campari
  • 1 oz gin or vodka
  • 1 oz red vermouth
  • 1 oz Prosecco
  • ice

Preparation

Fill rocks glass half way with ice. Add Campari, gin and vermouth. Stir and top with Prosecco.

Marasca Fizz

Ingredients

  • 3 maraschino cherries, plus 3/4 oz syrup from the jar
  • superfine sugar
  • 3 dashes of Angostura Bitters
  • 2 brown sugar cubes
  • ½ ounce cherry liqueur
  • 4 oz chilled Prosecco

Preparation

Moisten the outer rim of a flute with ½ ounce maraschino cherry syrup and coat with superfine sugar. Sprinkle the bitters over the sugar cubes. Add the cherry liqueur, maraschino cherries and the remaining 1/4 ounce of maraschino cherry syrup to the flute. Top with the Prosecco and add the sugar cubes.

Rossini

Ingredients

  • 1 oz puréed strawberries
  • 3 oz chilled Prosecco
  • 1 fresh strawberry, sliced, to garnish

Preparation

Pour strawberry purée into a chilled wine flute and top with Prosecco. Garnish glass with fresh strawberry.

Pretty in Pink

Ingredients

  • 2 oz vodka
  • 1 oz simple syrup
  • 1 oz lemon juice
  • 1 spoonful of blackberry jam
  • splash of Prosecco

Preparation

Add all ingredients except the Prosecco into a shaker and shake vigorously for a few seconds. Strain mixture over ice in a rocks glass. Top with Prosecco.

Red Hot

Ingredients

  • 1 ½ parts vermouth (chilled)
  • 1 part cherry juice
  • 4 parts Prosecco

Preparation

Combine the vermouth and cherry juice, along with ice, in a shaker. Shake and strain into a chilled glass. Top with the Prosecco.

Citrus 75

Ingredients

  • ½ clementine
  • 1 ½ oz gin
  • ½ oz Limoncello
  • 3/4 oz fresh lemon juice
  • ½ oz honey syrup (½ tbsp honey mixed with ½ tbsp warm water)
  • 1 oz chilled Prosecco
  • 1 lemon twist, for garnish
  • 1 orange wheel, for garnish

Preparation

In a cocktail shaker, muddle the clementine. Add ice and the gin, Limoncello, lemon juice and honey syrup and shake well. Strain into a chilled coupe, top with the Prosecco and garnish with the lemon twist and orange wheel.

Italian Spritz Punch

Ingredients

  • 6 oz Galliano Italian herbal liqueur
  • 1 750-ml bottle Aperol
  • 3 750-ml bottles chilled Prosecco
  • Ice, preferably 1 large block
  • 2 sliced oranges, 2 sliced lemons and ½ pint raspberries, for garnish

Preparation

In a punch bowl, combine the Galliano and Aperol and refrigerate until chilled, about 4 hours. Gently stir in the Prosecco. Add the ice and garnish with the oranges, lemons and raspberries.

Blackberry Prosecco Pops

Summer cocktail time in Italy is a happy time and is about to get a little happier, thanks to this recipe for popsicles made with Prosecco. Delicious and easy to make, this ‘poptail’ is the perfect frozen drink for warm days and nights and are a great way to welcome your guests to your next summer get together. The icy treat also makes the perfect dessert and are so light and refreshing that they can be served between courses.

Ingredients:

  • 1⁄3 cup blackberries
  • 4 oz crème de cassis
  • splash of fresh lime juice
  • 2 pinches lime zest
  • 20 oz Prosecco

Preparation

Pour crème de cassis on blackberries and crush. Add lime juice and zest. Put 1 teaspoon of mixture into each popsicle form and pour Prosecco on top. Freeze for 2 hours. Insert popsicle sticks and freeze overnight. Yields 12.
